So Dark is a Grand Cru Champagne, exploding with aromas of tulip flowers, orange zest, lemon, toasted almond, and subtle, earthy hints of mushroom. It is essentially a Blanc de Noirs wine, crafted from 80% Pinot Noir and 20% Chardonnay, while retaining a beautiful light golden colour, with fine and persistent bubbles. Champagne De Saint Gall is located in the small commune of Avize, in the green heart of the Champagne region. It is a member of Union Champagne, a "cooperative of cooperatives" founded by Grand and Premier Cru grape growers in 1966. For the last 50 years, the Union has played a vital part in flying the Champagne flag, both in terms of quality and the region's worldwide reputation. This Champagne begins with a rich, vinous taste of strawberry, lemon zest, brioche, dry apricot, and gunsmoke. It treads the line between density and mineral freshness perfectly, offering a wonderfully balanced and structured expression of the land. The fruits were sourced from Union Champagne’s Grand Cru vineyards, scattered around the sub-regions of Côte des Blancs and Montagne de Reims. Pair this wine with tuna steak, mushroom risotto, or white meat.
