Chorey les beaune 2020 (Domaine des Clos)

Cellar for 15 years or more. Decanting is optional, for 30 minutes to an hour before serving. Chorey les Beaune is a commune in Burgundy’s Côte de Beaune, known for its crisp and summery wines. This one was crafted from 100% Pinot Noir, and is bursting with scents of wild strawberry, raspberry, dried rosemary, spice, and umami, with earthy hints of barnyard and forest floor. It is a vivid ruby colour in the glass, reflecting the depth that comes on the palate. Domaine des Clos was founded by Grégoire Bichot in 1995, a member of the esteemed Bichot winemaking family. It can be found in the heart of Nuits-Saint-Georges, but owns 6 hectares of vineyards in all, dotted around the green landscape of Burgundy in famous terroirs such as Beaune and Chablis. In the cellar, Grégoire takes a pure approach to winemaking, avoiding interference with the natural process whenever it is possible. In the mouth, Chorey les Beaune is well-structured, with vivacious acid and finely-grained tannins. You can mainly detect juicy flavours of red fruits, with supporting hints of vanilla, cinnamon, garrigue, and a notable vein of minerality. With some ageing in the cellar, it will also reveal a more potent side, with strong hints of gingerbread and leather. Consider pairing it with mushroom risotto, salmon, or a tuna steak.
