Le Guaite di Noemi project was started in 2016 when Noemi Pizzighella decided to take over part of her parents' business with the aim of producing high-quality wines, characterized by great work and care of the vineyard and an innovative philosophy. The wines with this label are made with grapes coming from the Le Guaite cru vineyard, a plot of just under 3 hectares, located between Lessinia and Lake Garda. Tisbe is produced with Cabernet Sauvignon grapes, left to dry for approximately 3 months, with a technique similar to that of Amarone. The finished wine is then aged for 3 years in French oak barriques and then a year and a half in the bottle. The first harvest was in 2013 and the wine is released only in the best years. Its name refers to the Hellenic poem of Thisbe and Pyramus. The wine has a deep ruby red color and a complex and intense aromatic profile with notes of ripe red fruit (blueberries, plums, and cherries), dried fruit and vanilla, and then chocolate and dried aromatic herbs. On the palate, it is concentrated and full, with smooth and well-integrated tannins. The finish is long and well-balanced. Perfect for red meat and game, especially if slow cooked and prepared with herbs and spices.
